  • Cake Layer:
    • 1 1/2 cups all-purpose flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 1/2 tsp pumpkin pie spice
    • 1/2 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 large egg
    • 1 cup canned pumpkin puree
    • 1 tsp vanilla extract
  • Crumble Topping:
    • 3/4 cup all-purpose flour
    • 1/2 cup brown sugar, packed
    • 1 tsp ground cinnamon
    • 1/2 cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice for the cake layer.
  3. In a separate large bowl, cream butter and sugar until light and fluffy. Add the egg, mixing well.
  4. Stir in the pumpkin puree and vanilla extract until just combined. Gradually add the dry ingredients, mixing until smooth.
  5. Pour the cake batter into the prepared pan and spread evenly.
  6. In another bowl, combine the flour, brown sugar, and cinnamon for the crumble topping. Cut in the cold butter with a fork or pastry cutter until the mixture resembles coarse crumbs.
  7. Sprinkle the crumble topping over the cake batter in an even layer.
  8. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool slightly before cutting into squares and serving.
