- 8 oz (225 grams) penne pasta
- 1 tablespoon butter or olive oil
- 4 garlic cloves, minced
- 5 oz (140 grams) full-fat cream cheese (recommended: Philadelphia)
- 1/4 cup (60 ml) starchy pasta water
- 1/4 cup (30 grams) parmesan cheese, grated
- 1 small lemon (zest)
- 1/2 teaspoon fine salt, or to taste
- 1/8 teaspoon black pepper, or to taste
- 1 tablespoon lemon juice
Instructions
- Cook the penne pasta in a large pot of boiling salted water until al dente. Reserve about ½ cup of the starchy pasta water.
- While the pasta cooks, melt the butter or olive oil in a large skillet over medium heat. Add the garlic and sauté for about 2 minutes until fragrant.
- Add cream cheese, ¼ cup of pasta water, parmesan cheese, and lemon zest to the skillet. Stir until smooth and creamy.
- Reduce the heat, then stir in the lemon juice. Adjust salt and pepper to taste.
- Drain the pasta and add it to the skillet. Toss to coat for 8-10 seconds, ensuring the pasta is well covered in sauce.
